I use a regular eating spoon for measuring, which is a bit smaller than a standard tablespoon. Feel free to use measuring spoons if you’d like—as long as you keep the ratio, it’ll turn out just fine. Also, don’t pour in all the sauce at once! Add it little by little and adjust to your taste as you go. Hope you find the perfect flavor for you :)

🛒 Ingredients
- Seafood mix
- ½ onion
- 1 green onion
- 6 Shiitake mushrooms
- Wood ear mushrooms (optional)
- ½ spoon minced garlic
- ½ spoon minced ginger
- Udon noodles (or chinese-style noodles)
- A pinch of crushed red pepper (optional)
- 1 spoon sesame oil (optional)
- 1 spoon chili oil (la-yu) (optional)
- sesame seeds (optional)
🧂 For the sauce
- 1 spoon soy sauce
- 2 spoon oyster sauce
- ½ spoon sugar
- 2 spoon mirin (or cooking wine)
- 3 spoon Korean chili flakes (gochugaru)
- ½ spoon chicken stock powder
- A pinch of black pepper
- 100ml water
- 1 spoon cornstarch

📄 Directions
- Mix all the sauce ingredients in a bowl and set aside.
- Thinly slice the onion, green onion, and shiitake mushrooms.
- Add other veggies you like (carrots, zucchini, etc).
- Cook the noodles, drain, and set aside.
- In a pan with some oil, sauté the garlic, ginger, white part of the green onion, and crushed red pepper until fragrant.
- Add the vegetables and stir-fry quickly over high heat.
- Add the seafood and stir-fry until just cooked.
- Pour in the sauce. Once it thickens slightly, add the noodles and toss everything together.
- Finish with a drizzle of sesame oil, chili oil, and a sprinkle of sesame seeds.
